chilled avocado soup

Here is another amazing summer recipe from my upcoming cookbook MODEL KITCHEN!
Who doesn't love a fresh cold soup on a hot summer day?
This soup is super easy to make and healthy. Serve it with a fresh salad or a whole grain toast with goat cheese.

For 4 bowls we need:
- 2 ripe avocados, halved and pitted
- 1/3 cup peas, cooked and cooled
- 4 cups cold vegetable stock
- Juice from 1 lime
- little bit of mint
- yoghurt
- Salt and pepper, to spice it up a little

Put all the ingredients in a blender until you get a smooth soup. Put in the fridge for 45 minutes, so the soup is chilled before serving.
Finish with a spoon of yoghurt and some fresh mint leaves.

work that body

Some of my followers asked me before what my workout routine is, so here I'll tell you my secret to stay in shape.
Besides eating healthy and fresh another (and probably the most important) way to keep fit is to workout on a regular basis.
Ceesie tries to workout at least 5 times a week.
I like to do my sports in the morning, I think when you do them in the am you stay healthy through the entire day. I mean who wants to go for a fattening lunch after you just did one hour of exercise?
My exercise starts with a 30 minute run. I like to run outside in a park or on the west side highway, when I'm in NYC.
Ceesie loves to run, it's good for the body, easy and you can do it anywhere.
I also try to swim a lot so I often mix the two for my warm up.
After my 30 minute run or swim I go for a 45 minute full body workout: lifting weights, abs, squats,...
I don't lift too heavy weights, as I don't wanna get bigger! I still need to fit my skinny jeans and my slim fitted blazer after all. ;-)
When I don't feel like exercising I force myself to do a group class at the gym. Chelsea piers has the best classes!! 'Body sculpt' and 'ab lab' are my personal favorites.

All good things come to an end, so ended my ibiza trip.
I think I had one of the best holidays ever in my life...
The last 3 days were just as incredible as the first, or maybe even better.
My friend and I had amazing dinners, relaxed, discovered the most beautiful beaches and enjoyed the island like a real local. No 'playa den Bossa' or 'Sant Antonio' for Ceesie! (THANK GOD!)
Ceesie did it all in style and had lots of adventures and unforgettable experiences.
I got invited to Mister Valentino's yacht. The boat was the most beautiful I had ever seen!
I had drinks with Valentino, Giancarlo Giammetti and Olivia Palermo: CHIC!
The next day my friend and I went to one of the smallest but most beautiful islands in the Mediterranean, Formentera. We rented a bike and went from little bay to little bay. The island reminded me of the Bahamas, the water was clear blue and the beaches as white as snow.
The last night my friend and I had a major KIKI at club Pacha. I mean, I couldn't go home without having a giant party, right? After all it's Ibiza...
Now all tanned, relaxed and missing Ibiza I'm back in Belgium and working non stop on my cooking so it will be finished in time.
